Cocoa Raspberry Muffins

As soon as I had enough raspberries to serve as something more than a snack it was time to get my cookbooks out.

Vegan Brunch is one I don't mention enough but it has plenty of my favourite recipes in it. The Perogi, crepes, hash browns, Red Flannel Hash, Tempeh Sausage Pastry Puffs and Coffee Chip Muffins are all regulars on my plate.

These Cocoa Raspberry Muffins may have to join them. I was a little disappointed with them straight out of the oven. I could taste the cocoa and I could taste the raspberry but they didn't really come together. A few hours later and the muffins hit perfection. The flavours mingling perfectly. So do yourself a favour and make these, but do wait for them to cool.
